How would you check for cloaking on your website (Unintentional, as if you were hacked)?

Rankings on one of my websites are fluctuating hard, going from featured snippet, to not being in first 100 results (still indexed though), and then back to snippet after few weeks, then gone again, and so on. Not just one article but the site as a whole.

I checked Google Search Console and ran all other relevant tests by Google, all of which say there are no issues. However when running some free to use "checkers", I got the following:
No photo description available.

I'm not sure what to think but better safe than sorry. Also, there's a shady guy in my niche that does Black Hat, and knows for me as it copied my website in terms of structure and topics, so it just adds to my paranoia lol.

Anyways, what would be the most reliable way to check if there's cloaking on my website?

Sounds a lot like Google being Google during updates.

Regarding the first check in your screenshot, did you work out what the difference was? What info did the 'show' link give you?

So true... But this keeps going on for a year now so I'm not really sure anymore lol.

Here are the screenshot details:

Basically an endless string of code, some marked red, some marked green. I'm not an expert when it comes to coding but all I saw is websitesite or ads related. :/

The highlighted text is css, and looks like it's for rendering a mobile menu. Does the site use Ezoic?
