When I find a keyword with which I want to make a website and I look in the serps to analyze the competition that things I have to take into account to know that this keyword has very low competition and position with few links? Thank you

Try to find some niche keywords as long tale or specific low search volume. Put these keywords in your serps. It will help to rank soon. (Make sure your site pages should be index)

use ahrefs, there you can find even backlinks of your competitor.
