I don't think I will be using this feature, but I noticed some domain names are cloaking their hosting/server by using cloudflare server that is when I checked using whois, instead of standard hosting name server, in other words, NS1.webhosting.com, NS2.webhosting.com .

I want to know, is there any trick to do this? Do I need to use the paid upgrade of Cloud Flare?

cloudflare have ability to hide your real server IP or others info about your hosting..
    to do that..
    - signup cloudflare ( free is enough )
    - Add your domain to CF and follow their wizard.. in the end you will got 2 NS from CF
    - Go to your Domain panel ( not your hosting ) and change with that NS..
    - go to CF and provide information about your hosting in DNS tab ( IP hosting = A record or CNAME )
    - If you have domain IP put @ in Name and IP in IPv4 also www in Name and IP in IPv4

    Correct Me If I'm Wrong

It's free. I'm guessing since you already mentioned "clocking", you have it in your mind that people won't be able to report to your hosting providers but that's entirely wrong. Cloudflare has abuse form where upon reviewing they can and will contact your hosting providers if it's something against TOS.
