For 1 website, I post once a week, and the rest of the week I make sure that my post gets full value.

it's doesn't matter
I have 2 website:
1. 1 post per week
2. 10 pests per day

.. and guess what, some traffic and google position for both

I do not think that one post a day is spammy. Lots of people do this.

If it is well researched and extreme quality then its enough 1 post per week. It must be unique and informative to attract visitors. Search engine likes your website if the site has regular traffic.

It depends upon the niche

News websites and recipe websites lots of posts

Fishing websites - very few posts (because the owners are busy fishing...)
