I am going to create a website in my native market which main keyword in English would be "pellet boilers". My goal is to rank that website to the first page and then work in affiliate with other companies in my country, but I can't imagine how my website should look like. The first top 5 websites are e-shops with lots of products. Should I create a simple website with some articles, youtube videos, schemes of boilers and photos or create a website with lots of products and description about them?

Nobody can answer this for you, because it depends on what your goal is. If you are going to sell the products onsite, well, you have got to create a shop and list the products. If you are just going to build an informative/review ad based site, then focus more on the content. Also, for future reference, be careful about posting your keywords.

Your website should be designed so that your potential customers can identify with it. This is a basic sales point, and means a look consistent with what your customers — and potential customers — expect, a look that seems "right" to them.

Yeah, You are thinking good but most focus on content on that website because search engine will not check your design. Search Engine only check the contents in your website.
Since your competitors are selling items that's why they are e shops you can try researching a bit if building an eshop is better that way. Again, like they have advised, it is better to know what you want and the effort you want to do. You can still do a blog and put a page where they can purchase it.
