I have a bit of a ball ache at the moment. A while ago a client paid me with USDC. I thought you could just withdraw it like BTC but apparently you need ETH.

I have $257 in USDC at the moment, does anyone know how much ETH i would need to withdraw that.

Depends on the exchange but in Binance that enough for you to convert to ETH or any other coin

I am using coinbase and plan on converting it to bitcoin. Only issue is, coinbase will not allow me to withdraw USDC due to needing ETH to withdraw the USDC. However, it does not state the exact amount needed in ETH to withdraw USDC which I'm finding a bit confusing in all honesty...

If you want to withdraw money from Coinbase with minimum commission, you should use xrp. First convert usdc to xrp and then withdraw. In fact, coinbase does not charge any fees for withdrawals. Only network fee is charged. This is available at lowest xrp. It will also come very quickly.

Convet to BCH or LTC then convert BCH to ETH or to the coin you want to withdraw from

The USDC coins in circulation are all ERC-20 tokens, which are located on the Ethereum network and Ethereum fees are usually always high.
You can use an exchange like Binance, etc and change the USDC to USDT (may have to first convert to BUSD if using Binance and then to USDT or even possibly convert directly from USDC to USDT). Then withdraw USDT in trc20 in which fees will be around just US$1. Many wallets such as Trust Wallet supports trc20.
And remember, NEVER share your pass phrases and private keys with anyone at all whatsoever. (Telegram is very much misused for crypto related scams).

you can convert it to usdt and hold without withdrawal

Just keep an eye on gas fees: https://etherscan.io/gastracker

The cheapest is in the weekends and at the end of an hour. Example Saturday night at 03:52 is better than at 03:01. Most scripts are set to execute at the start of the hour.
