How much content is enough?

yeah i know the more the better, but how much content is enough to have on my website so i can start focusing on link building? (measure this by amount of articles, say each article is 500+ words)

Depends on a keyword and how hard the competition is. For an easier keyword it would be fine to just have a handful of articles. If it's harder, more content will help.

It is enough to have 3 500 words well written unique articles.

It really doesn't have to be massive at all. The goal of initial content before you start building backlinks is basically to have google index real pages instead of blank templates or irrelevant content. So if you have articles of 500 words, write 20, two a day, for 10 days. Then slow it down to 3 times a week, then twice a week, then once a week and keep at that pace. While you're doing that, you can start backlinking immediately.

I'd go with around 5 articles on your page, that should be enough as long as they're well written.

It depends on the competition and the number of # that this keywords will have.

For link building you can have just one page it dosent matter.

Now I'm building sites with 3 articles / ~800 words for less competetive keywords.
And 3 articles + some on autopublic (like 1 per week) / ~800 words for more competetive keywords to show that content is up to date.

I always no matter what have some form of a blog on my websites. This is because fresh content even if you post something once a week in a blog allows Google to see that your site is kept up to date. Also it allows you to rank better on your keywords. The thing is you can never have too much content...
