You start by managing One. Work for a few weeks and if you have time, start a second one. You will know how many you can manage once you aren't able to work properly on all.

If you're new in the game, you should start with 1 site. Don't do the mistake I made to start a ton of projects, cause you may lose money and, more important, time. I'm not an expert, but I'm in a similar situation as you, I have to make a choice. So I see our situation like this:
it depends on how big the websites will be, how much you estimate the potential traffic to that site and the monthly earnings. If you are going to launch one big specific project that you believe in, you like website's main topic/niche and you know it will give you a big satisfactory income, and you will drive traffic not only from SEO, but also from social media like instagram, facebook, tiktok, youtube, pinterest. Then devote your time to just this one project. Because working on seo and on social media accounts is absorbing, it takes a lot of time. If you plan to have several small projects (in different niches) and rely only on SEO then I think it is good idea to run several sites simultaneously. You will add articles to each of the websites daily or every few days in a natural way, without rushing. The sites will grow and position themselves for keywords after a few weeks or even months. Remember that if you add too many articles in one day, google may de-index those pages (it may or may not). You have to judge for yourself what kind of plan you have and what kind of results will satisfy you. Good luck.

If you're going the organic SEO path and planning to rely on the Google scumbags start with 3-4 sites. Yeah, it will indeed be overburdening to maintain all of them but at least you'll have fail-safes in place if Google decides to fuck 1-2 of your sites.
I regret not starting 3-4 sites at once and instead putting all my effort to one project that is on it's way to the grave because Google is being Google.

You should start with 1 site and notice if you work properly on it and have more time so you may start more than 1. It depend on your ability.

Star with one and learn everything. It will be like test blog. There are bloggers who fail with first 10-20 blogs before finding their first success. So, you have to be patient for results.

It depends on how many writers and editors you have. If the purpose of the blog is to sustain itself over the long term, I would suggest starting a single blog and putting in your efforts to rank and maintain it. Having one good site is better than running 10 low-quality sites.

My suggestion would be, For a newcomer, it's generally advisable to start with one website or project to learn and focus effectively before considering multiple sites!
