How many posts daily for new website?

Publishing 800 articles in 2-3 days is a lot and can be overwhelming for Google's indexing systems. It's likely that this is why your articles were deindexed. This can be seen as spammy behaviour.
I would recommend starting with 2-3 articles per day and then gradually increasing the number of articles you publish as you see fit.

Publishing too many articles too fast likely triggered Google’s spam filters. Start with 2-3 per day, then gradually scale up while ensuring quality and proper indexing. Let me know if you have doubts mate!
 
Google prefers consistent, high-quality content over mass uploads-start with 2-5 per day and monitor indexing.

I think it's the articles themselves, how do you write so many good articles? Or is it all AI content, maybe it's the quality of the articles?
 
Use WP import's scheduler and schedule 1 article for every 3 hours initially. Meaning 8 articles per day. This you can have for couple of months. Then start increasing the frequency. I have done same and have around 1000 articles published out of which 800+ are indexed so far and remained indexed for couple of months now.
