I would also use what is (in my opinion anyway 
) laughingly known as "latent semantic indexing (LSI) So, I would also use "really good hotel", "great hotel", "good hotel for short breaks" great weekend hotel package", "hotel with great reviews",etc.
The whole point of the LSI bit is to include paragraphs and phrases around your keywords that a customer looking for a great hotel would expect to find and it doesn't matter if your anchor text is 4 or 5 words long, the key is to make sure that the anchor text is what people are searching for. Use Google keyword checker to check it out.

If those are the keywords that you are targeting, then you need to be building tons of backlinks for them using high authoritative sites.
If Angela is saying that, then I would definitely NOT listen to her, as it is very bad practice to keep on using the same anchor over and over.
If you want it the WH way, then you should make sure your backlink profile is as natural as possible and there is no way on earth that 100's or 1000's of individual webmasters only use one anchor to link to your website. Every person links to you in a different way, with different anchors, some will use your websites name or URL, others will use keywords and more others will use anchors like "here", "click", etc.
While it IS true that you achieve better and easier rankings if you use the specific anchor text for which you want to rank, diversification is key to longterm success. Do as hmeister said and you will stay longer at the top, even though it will take longer to get there.
