How long does 'google dance' last for?

My website was removed from google serps for about 5 days now, I bought a new domain and linked that to my website and 301 redirected my old domain to the new one.

After a day my website was #1 again for my second keyword but unseen for my main keyword. Then it disappeared, and after a day it reappeared, then disappeared, re-appeared and this keeps happening every few hours for 4-5 days now.

When does the dance stop? can I expect my website to go back to where it was?
 
For one, I am not sure you want to redirect your old page if it has been penalized!

Secondly, to the best of my knowledge - the dance can last up to a month for a brand new domain.

I think there's no specific time when will Google dance last. There are times that it can last for a week or two. However, most cases take hardly one week. Yeah, there's a great chance that it can return back where it was before.
 
estimate about 2 weeks up to 3 weeks conservatively
 
Sometimes this dance happens for longer periods if there's something wrong with the link profile,
you better do a link checkup if you haven't already.
 
Check out all the links are settled down, It probably take some time to settling up there is no specific time to last. You can keep add the quality contents on your blog and build some high quality backlinks.
 
I think no one can say how long some of my sites came second and 1st page ..stayed that way for forever while some been seeing dance for more then 4 months now
 
Difficult to tell, but it could be something else too that Google may not be liking.
 
Does anybody know if I make my website under a subdomain and redirect main domain to the subdomain (on the original domain) will that work?

These days it takes months for the rankings to finally settle down. Google is leading you into believing that your link building is worthless and you can not accurately gauge the impact of your efforts on your rankings. Huge fluctuations sustained for a long time and long delays in rankings to finally establish a more stable state are what google is using as a distraction to make us all believe SEO is dead. But its actually not.
 
There is no fixed time for google dance to settle down.you must wait for it.And keep building the quality links to that site.
 
No certain duration for Google Dance phenomenon. We've got members in BHW who have been witnessing Google Dance for like close to 45 days now. My best bet would be to check the BL profile! ASAP.

The chances of retaining your same position after stabilization is 50 - 50.

I don't agree that it hardly takes only one week. It can last that much, or less, but for a new domain, which most of people are using, it can take up to few months, it usually slows down over time, but in my experience, average dance last for about a month. It all depends, its hard to give correct answer, but it can take more then a week, OP doesn't have reason to worry, at least from what I know :)
