How important is a website structure for seo.

I currently have a website that is in 4 languages with 4 different subdomains. The pages are all on my root folder of my site in alphabetical order. How important is structuring my site in some type of hierarchy for SEO. I make frequent/daily changes to my site, and each time I upload it to the server it goes back into alphabetical order. Also is it okay to have all languages in one sitemap that I submit into Google & Bing. I appreciate the assistance!

Your FTP client (I'm assuming you are using one based on what you said) is putting your files in alphabetical order. This always happens and is not relevant to SEO.

I would submit separate sitemaps for each of your domains to Google in their respective languages. This is not because they are in different languages but because they are different websites.

Keeping the old pages is important as google webmasters tools show you. You can easy make an account and monitor everything from them.
You will also need to keep a sitemap with the most important pages from your menu.
Don`t change the main pages on a daily basis.
