To be fair you specifically said you didn't want to rip it. Your first post does basically read "teach me how to develop websites".

If you just want to rip it don't waste your time learning code. There's nothing hidden on the back end here so you can literally just download their site and change the values to whatever you want in notepad. HTTrack is handy as others have said even the example you used has just ripped the original.

Then, if I remember rightly, there are two main files you'll want to screw with. Just run find and replace until it says what you want it to. And there's a crap ton of the chat stuff it's pretty boring to redo but it does look good.
