How does Keyword Ranking work exactly?

I still don't have a site or anything. But I research daily as much as possible and try to touch up on things I am unsure of. And well, I'm a little unsure of how Keyword Ranking works if someone could explain this a little better?

What I'm not understanding is, how on earth do you rank up if your not even on the first 1,000 pages or so? Let's say your site is about.. cats and dogs.. no one in their right mind is going to go through 1,000 pages of search results to click your site. So yea I'm totally confused as how you even rank up with keywords?

And then I guess my next question would be how you find the right keywords to rank up with?

The goal is not to be on page 100, it is to be on page 1. I have never tried to rank a keyword for page 2 or 3, etc. The goal is to be #1 on the first page. That being said, choose your keywords accordingly.

"Cats and dogs" will probably be extremely competitive, however, something like "cats and dogs leather collars" may not be. (this is just an example).

Similar to any business venture, you attempt to see a gap in the market and take advantage of it.

Build backlinks and your keyword will no longer be in the top 1000, keep buildin backlinks and you will get to top 10

Keyword ranking, when done effectively, can do wonders for the website. Keywords that rank high on a search engine increase the traffic for a website. So, the target would be to use effective keywords.
