Where they're talking and at the end of a sentence, it feels like a fresh new cut/video but it's all sequenced into one video.

It makes it feel quick and fast. I'm not sure how to explain it.

It doesnt seem like it was all recorded at once. Did they record sections and stop then record the next section of the video? I'd show an example if I find one

I do this. It's literally just clipping down to the millisecond so it seems natural.

That editing style is called "jump cut" now that you know the name of it you can look it up.
Jump cuts are very easy to do. It's an easy editing trick that works very well with YouTube.

It's called jump cuts. It's just people editing out stumbled words, "um's", and awkward pauses.

I think you're asking about L-cut. A transition between scenes where the video of the incoming scene already play while the audio (ie, the end of a sentence of people talking) of the current scene still play.

You just need to cut the video of current scene shorter than its audio, and put the next scene (cut or mix its audio accordingly).
