How do I register domains from other countries?

That depends largely on which country code's TLD you're trying for. Some countries are very strict (for example, Canada's .CA enforcement). Others, not so much (for example, Tuvalu's .TV). If this is still an open issue for you feel free to post here or PM me the countries you're looking at and I can give you some advice.
Well actually, Canada domains are the ones I'm looking to purchase.

Doesn't matter which registrar you use, in the end CIRA (the Canadian registry) is the arbiter. They can and do periodically audit registrations and request supporting documentation to prove a registrant of a .ca name meets the Canadian Presence Requirements. You run the risk of losing the name(s) if you don't meet their audit requirements.
You can register the names without actually meeting the presence requirements and play the odds that they won't audit you, just be aware of the risk there. And that CIRA does have a history of actually enforcing their requirements.
Alternatively, if you're serious about wanting to get into the .ca namespace without the risk of losing the names, you could setup a Canadian corporation (thus meeting one of the presence requirements) or you could find someone trustworthy in Canada to partner with for registering the names.
