I created my site on wordpress, I have sitemaps, clickbank offers, mail chimp etc. It looks pretty good to me, but how do I know if I'm missing something important?

I dont think theres really a set list of "important" things that a website needs..

to be honest, I would think having too much stuff would be bad also :p

This is definitely not true, unless you don't care about ranking long term. You have to take on-page SEO and off-page SEO into consideration, as well as keyword density and functionality. Unless the site isn't an SEO site where as it doesn't really matter as long as it looks good, loads fast, and your links work.
