How do I beat directory like sites

Some pages like yelp and yellow pages have a huge and optimized internal link structure. However for the specific keyword of one page the have 0 backlinks. All their backlinks go to their mainpage.

How can you beat such a site?

I know "Google Sniping" with targeted sites is supposed to beat any large site but so far the bigger sites still rank on top.
