Considering a dedicated server is a big step up from shared hosting! You might find some cheap dedicated servers come without pre-installed software, but learning to set up PHP, MySQL, and Apache via command line is doable with some effort
 
For me, I think managing a dedicated server is challenging because you have to handle security, updates, and maintenance on your own so I guess you should have someone with you.

It's a pretty complicated task, if you wanna make it for the first time.
I advise you to start from something simpler.
