How can you tell website optimization made a difference?

I recently joined my SEO team and there were like 10 websites which were like scoring 30 something in google pagespeed insights. So I optimized all of them to about 80-90 avg. and it's been like 2 weeks. Some pages made more impressions while some did not (actually some got even worse impression than before).

Nothing else was done in the meanwhile. (Like adding more backlinks etc.) Does website optimization really help? Or am I doing something wrong while optimizing websites

Optimization does help but topical coverage is still the king. Nothing else matters now.

I see sites with 30-40 pagespeed scores raking in huge traffic solely by riding the topical authority wave.
 
wait 2-3 more weeks and check GSC again, i am pretty sure your impressions will be higher
 
metrics to analyze: did your traffic increase, did your revenue increase.
google has plenty of blog posts saying faster page load adds weight to seo.
just as many blog posts by marketer guys saying faster page load = better CR%.
personally, i found big boost in my CR% when i optimized my site to score "A" on https://gtmetrix.com/
some graphics to analyze below. imo as a webmaster, optimizing page speed is a 'must do' for every project.

You have optimized the webpages for speed & performance which is a good thing.

There are many other on page & technical factors in the optimization process.

Then there's content optimization, content organization, interlinking which is equally important.

So, you should consider these too for better ranking results.

In some cases minimal to no backlinks work if all above factors are properly taken care of.
 
Website optimization definitely makes a meaningful difference, and how you go about it does impact your overall result. That said, there are other factors that's probably more important to explore for something like SEO. That's not to say you should forgo it, of course.
 
Website optimization can be determined by measuring the website's performance metrics, such as page loading speed, user engagement, and conversions. If these metrics show an improvement after optimization, it indicates that the optimization has made a difference.
