How can i find some untapped niches?

I have been looking for answers all day. I am aware product launches are quite a large one, but i still cant seem to find any that are uncompetetive and profitable at the same time.

I am just looking for some small niches with money-making potential. How do you guys usually find untapped niches to create small sites for?
