She has potential to be a mainstream name for sure. Making a legit "authority site" about her would be best since the competition is low right now. She should be able to hit 300k+ exact searches monthly, plus several million long tail searches before the end of 2013.

Unknown is certainly an exaggeration. Rousey is a former Olympian, and the first American to win an Olympic medal in women's judo ever. She made headlines back then, but not to the degree she is now. She really isn't even close to mainstream yet. Gina Carano is as close to Mainstream as a womans mma fighter has been, and Rousey isn't even close to her.

Rousey needs a Superfight (Carano or Cyborg), then a movie deal or several television/modeling appearances. Without a superfight, I just don't see her career reaching Carano levels.
