I would say shoot right away for the dedi, mate. There is no point in waiting if you're in the 6 digits with organic traffic to have websites on a shared hosting server.

What kind of cost do you think is reasonable for a dedicated server? Again, I'm not doing anything super complex, no custom coded applications running on my sites or anything.

Anywhere from $59/month to $99/month. I would say stick to around $70-80 per month.
 
Well, I went with Beyond Hosting, and it has been an UTTER pain. They flagged my transaction as fraudulent even though I have another one of my companies using them right now.
 
There are many good hosting provider in the market like Bluehost and hostgator, which provide good support, I would recommended you take higher plan to get better specification as number of hits for your site is going to increase.

I settled on A2Hosting. Their service has been good so far and they offered to do the migration for free so we'll see how that turns out. The only thing to note is that if you want their pricing listed on the site, you have to prepay quite a few months in advance, otherwise your basic managed VPS with them is around 50-60 a month, which is...chunky.

I will probably move the rest of my sites over to a dedicated server later, I just needed to get this one moved over ASAP as it was experiencing some stupid load times.

An offshore VPS is a little counter-intuitive if you're not hosting illegal/sketchy content though. I have a US-based business that doesn't do anything illegal, and sells within the US only.

Anyways, quick update, everything with A2 is running as promised. No issues with them, and I can recommend them in good faith.
 
For future expansion I would personally use a VPS and steer clear of shared hosting for an eCommerce site. You need to think about PCI compliance when accepting credit cards and shared hosting could cause issues.
