I am working on an old affiliate website which has 100s of reviews, 'best bla bla' etc.
On this website the permalink structure is like this:

1)
"post type = post"

/best-leather-headphones
/best-windows-phone
/best-wooden-guitar

Some competition has a structure like this:
2)
"post type = page"

/best-headphones/leather
/best-phone/windows
/best-guitar/wooden

Clearly this second is much better for search engines.
In 2) google gets the hierarchy clearly. In 1) it's not so clear.

What would you do to communicate your URLs hierarchy to google if your URLs look like 1 ?

URL hierarchy is irrelevant, as long as the keyword is well formatted in the slug. You can just communicate everything through Schema/Structured Data... If you are running under wordpress you can do this with multiple plugins like WP Schema

In the google guidelines, they do talk about the important of hierarchy and architecture,

Organize your site hierarchy
Understand how search engines use URLs
etc.

Which of the WP schema markups do you use?

anyone else has suggestions?
