Hidden CSS- Site yanked

One of my sites got put under a manual review from "G".

Someone had created some "Hidding CSS" on some internal pages to create an unnatural jump in the ranking. My site had doorway pages or groups of cookie cutter low quality pages that dont do anything good for user experience. Google is specifically looking for this and manual reviews are on the rise from what im told. How can someone spot these types of pages on a site? I guess someone that PROMISED SEO SERVICES, screwed me over. Pisses me off. I need to check my other sites. How can I spot this?
 
Can anyone explain hidden CSS? My guess is that you hide content form the visitor, but that content is also parsed by the search engines.
 
I don'[t know what exactly is hidden css.

I guess he might have stuffed your pages with high keyword density and might have changed the color of text to invisible to human eyes using CSS
 
visibility:hidden;

I used to use that in PPC, but haven't done it at all with SEO. That would be plain stupid.
