My sent messages never show either. I've often wondered if it was just me

My sent messages are always in my box. Maybe ask a mod.

2 things, you can set your outgoing messages to be saved in your sent items folder:

enable this:
Sent Private Messages: Save a copy of sent messages in my Sent Items folder by default
and you can also ask for a read receipt of every pm you send, there's an option when you send the pm, just scroll down
