As a matter of fact you can verify up to 5 accounts with a single SIM card. When recovering you can recover the same 5 accounts with the sim.

So am I right by saying you buy a sim and verify and then done. Don’t you have to pay monthly for a sim!?

Depends on the carrier. If you buy top up sim cards you dont have to pay any monthly fee. Usually if a sim card is not topped up for 6 months or a year it stops functioning. Check with the carrier you want to get the SIM cards from to be sure.
Sometimes (not always) Instagram will only allow you to recover your account with the same SIM card you verified it with in the first place so its best to keep your SIM's neatly organized.
