So here is my article structure:

------

Title: How to do XYZ (H1)

Introduction (H2)

"text...

...here are some of the best ways to do XYZ:"

Thing 1 (H2 or H3?)

"text"

Thing 2

"text"

Thing 3

"text"

Etc...

Conclusion (H2)

"text"

---------

So, the things in the list should be H2 or H3? And try to justify your answer please so we can acquire more useful knowledge.

Styling your article is all about readability, and making it easier to understand, enjoyable giving you scores for how long the person stays on the page( read it all )
and how easy it is to access informations shared.

So focus more on making it look neet, and easy to read, regardless of the tags..

You can even make thing1,2,3 in Bold and different colour.. still does the job.

<H2> " here are some of the best ways to do XYZ:"
<H3> Thing 1
<H3> Thing 2

I would go like this with my blog

I would love to just make the list headers in bold and call it a day, actually.

But won't Google like them better if they were headers instead, if I'm not mistaken?

this is how I would do it

H2 - Introduction
H2 - Whatever these things are
H3 - Thing 1
H3 - Thing 2
...
..
H2 Conclusion

I think of headers as equals and subsets.

For example.

Title/H1: Obvious Blackhat SEO Methods
H2: Intro
H2: Obvious Blackhat Methods
H3: GSA Spam
H3: Link Schemes
..
.
H2: Illegal/Blackhat Methods
H3: Cookie Stuffing
..
.
H2: Conclusion

Why conclusion not H2?

OK agree for the H3s, but using a regular sentence as an H2 that is not KW or even something "catchy" is not something I have ever seen.

Assuming that KW is "How to do XYZ"

"some of the best ways on how to do XYZ" would be a great H2 + the main KW is in the title too.

This is perfect, thank you D.J!

I got you you're saying the same thing as DeadJoe. Yes that's the good way.

Thanks this is what I'm looking for to make the sentence in the context into a good H2.
