I trust data from GA(or other analytics tools) more than server data. Servers often count bot traffic alongside human traffic.

GSC doesn't record complete/accurate data sometimes. For one new site I was managing, I noticed, sometimes GSC doesn't record visits or impressions on Google search but I get the visit on the site recorded from analytics tools that user came from Google.
