I have a keyword that I've already ranked for and I'm seeing really good conversion off of (3-5 conversions a week) but if I go to google trends and lookup the keyword, it says the search doesn't have enough data to show.

Why is that? Surely this keyword is getting a lot of volume if I'm getting that much conversion... What should I be looking at for volume if not google trends?

Google trends show trends. It will show how many searches a term has compared to other time periods and not in finite numbers. To see trends data, a keyword must have 1000s of searches. If you want to check search volume you can go for Google's keyword planner, SEMRush, Ahrefs or any other tool of that kind.

hey, don't get depend on tools every time, sometimes just follow your instinct, manually search the term/keyword and see if there are any ads running on google, and what google autosuggest says, google trends shows a particular data which might be not accurate every time.

Trend is something with pretty big audience usually not lasting for very long, you should not look for your keywords there

If you're getting conversions and what's the problem? o_O

Go with shts...Oh, I mean flow*
