Hello,
I have a small business, doing well so far, and I'm now expanding it into two other neighbouring countries.

I have a very good GMB profile so my question is should I create two more separate profiles, one for each country, or should I add the new locations to my current one?

The main factor in GMB is proximity.
So there is no doubt you will need GMB in the location you targeting.

Thank you. Does it make any difference if I create the new profiles where I'm currently based and without being in the profiles' countries?
 
Not sure what you mean.
The new GMB address need to be in the location you are targeting .

Adding locations to the current one is what you should do.
