The longest was 6 - 7 month. Probably took three days or so to build, and pulled in about 5k euros a month at its peak, and two years later the sign ups from it still pull in 800 - 1500 euros a month.

You have to know what your looking for. In this case there was only two online casinos licenced for a certain game in Germany with a 60k+ search term. One of the casinos was crap, so the other was bound to hold its players.

5k is nothing considering its search terms.
 
Restart the process with a well qualified person, who can do seo from start and in few months you can rank back, change the content and make it seo friendly, let full manual work be done for your site and no fast and luring black hat methods etc.
Have patience and bounce back. Work should be according to latest penguin and panda update of google. once you start ranking don't just fully stop the seo, seo is an ongoing process.

It seems your site may have been penalized by google (panda/penguin) the first thing you should do now is to get rid of all the bad and poor quality back links. Try to ascertain if oyu really have been penalized and/or there is any sign of a manual spam action. If it is an algo level penalty then you will be able to recover soon, however if it is a manual penalty you will have to wait for very long time. (many have to wait until the next major algo update). If you have no idea of how to go about it please post a thread in the hire a free lancer section and get an expert to help you. (you will have to pay ofcource :)
 
Like said above, you really need to redo your content and learn yourself something about SEO. There are a lot of unqualified people who will use methods not allowed and you won't know how to tell or check what is he-she doing.
