What percentage should I aim to achieve and what are your guys ctr percentages for your landing pages? I will be promoting a cpa offer and the funnel will go, traffic source - landing page - cpa offer. I’ll be using a simple 1 button landing page

It depends on the lenght of the page but if you say it's simple 1 button landing page i would expect 70%+ CTR

I think minimum 2%
