You can skip it postcard verification, go for phone verification than you can easily verify a GMB profile.

Majority of GMB profile creations do not get the phone verification option.
why some get and some dont ?

has to do with your cookies history and IP address. Google likes real users (or what appear to be real users) setting up real local businesses.

I've been receiving phone verification as my first given method many times recently, but after I verify "successfully" via phone, I log back in to see that they want a video verification now. I just want the dang postcard method to be given to me!! any tips on how to force this?

There are methods out there to verify them. You can try posting in the Hire a freelancer or the want to buy section.
