I'm looking for examples of Google My Business Listings with their addresses hidden (set up as service area businesses) which are appearing in the top 3 of the map pack but do not provide a service, but just sell products online e.g. an Antique shop, florist or home furniture store.

So niches which would traditionally allow visitors to enter their premises but do not - just offering local delivery.

Yeah, it’s rare but it exists.
Some small local sellers do manage to rank as SABs even if they technically just sell products.
You’ll mostly find this in niches like vintage furniture, handmade decor, or florists who push hard on “local delivery” and avoid walk-ins.
Google still lets it slide sometimes if the listing looks legit and there’s activity (photos, reviews, updates).
You can spot a few by searching things like “antique delivery near me” and checking which listings show no visible address.

Did you find any examples?
I only found 1 which was a florist, didn't really help with my data analysis as their competition had hundreds of reviews and their address wasn't very central.

When you’re creating the listing, pick “I deliver goods and services to my customers,” then clear out the address field and add your service areas by city or zip.

Google My Business (GMB) listings for Service Area Businesses (SABs) help local providers like plumbers, electricians, and cleaners reach customers without displaying a physical address. In order to promote local SEO and build customer trust, a service area board may specify specific service areas.
