I'm planning to start a new blog on a subdomain and I need it to be as fast as possible, which theme do you suggest I use on WP?

GeneratePress 100000%, but buy it. Don't be cheap. It is worth the money.
Their support will answer in 20 mins even if the question is not related to the theme, but to other issues - like plugins (that they didn't made), they'll make custom CSS for you, and explain everything to you like you never ever seen WP. I'm not affiliated with them (well, not here, I'm their affiliate).
We're using it on over 400 sites for kinda "complicated" things, and over 300 for basic (yep, over 700 sites in total).
"Complicated" = required custom work, "basic" - imported from site library and customized.
One of those "complicated" gets over 7 mil visits/months (sorry for bragging, I'm just proud), but we do have a custom server/hosting and dedicated team that manages it.

Can agree, I am amidst of switching one of my bigger project from full blown page builder into Generate Press
So far, it's not the simplest out there when you come from a page builder but you get a good grasp of it after a few days
In fact, I was ready to "sacrifice" lots of "features" for GP, yet my Front page still looks as stunning as ever while still scoring 99+ in GPI on pc & mobile
I tried so many other "fast" themes and GP has been one of the lightest yet easier ones I used

They have "visual builder" - GenerateBlocks (both free and premium, free does most of the work).

Hah, I feel ya. Make sure to check their vids on YT for basic introduction and in few hours you'll feel like it's Elementor or any other visual builder.
Important: Use free version, I had to use premium only few times.

GeneratePress is the fastest imo. You can even disable jquery if it's a problem in pagespeed tests, and the theme will still work.
I have a site using GeneratePress and GenerateBlocks scoring 99 on mobile and desktop speed tests, and it doesn't even have a caching plugin, nor does it need one.
You can use hooks to insert custom code or whatever, to replace plugin functions.
$59/year for up to 500 sites is excellent value for money.

I started using it a few days after, still, coming from elemenator & WPbakery, its a WHOLLEEEEEE downgrade in terms of features/user-friendliness.
But last few days, picking up the pace since I know where to get things from now instead of spending half the time looking for what I want

2nd one was - example: you're editing paragraph in the column but you want to select whole column to change borders - click on paragraph - check left corner VERY top and you can select parent element (column).

Also never edit whole pages in Elements, as that could make your life complicated (also one of my first mistakes). Learn how full width and container work. Learn all of PHP filters/hooks. They have a quite good doc.

Yup, I made that mistake aswell,
Made an entire page in Elements and learnt the hard way too.
Then went back and planned it using hooks, headers & heroes filters.
Much easier and better too.
Sorry OP, let's end it here saying GP > most things out there.
Learning Curve is not steep but you can still create a beautiful site without sacrificing features and speed

Back in the old days heatmap was the fastest theme if you are planning to monetize your website with adsense ads
