Cialdini is invaluable, although not exclusively about email marketing, it's a cornerstone for effective communication.
i dont think email marketing by it self need a lot of learning , the must important think you shoold learn is market research and how to approch your customer to have cheap lead .
Learning by experience is the core to doing email marketing especially if you have good copywriting skills (tell a story that will immerse your audience).
