If I were to write a couple eBooks on methods of making money and offered them as a bundle, how would I determine my pricing? Would $49 be good? $99? They'll be high quality eBooks with good information, not the usual bullshit people sell. Also, would you guys add affiliate links in the eBooks?

I would test the ebook first by providing trials to a select group. afterwards if its good the group will tell you how much its worth and refer people to purchase it from you. You can monetize however you want, it's your property.
 
Keep one method in one eBoook. If the method really makes money, $49 is not too much for it.
 
It'd be teaching how to build businesses in your local community and other stuff like that.. all things that work if you do I was just wondering if bundling or giving a freebie eBook would increase conversion rates because I'm adding value to the purchase
 
Are the 2 e-books connected? You could just upsell the 2nd e-book to those who bought the first one, unless you're already upselling something else ofc.

create a funnel - offer one with a pretend discount - $99 NOW $49.99 etc then offer second book straight after the first one sells for $24.99 and even a cheap $9.99 thing at the end (i always try to have 3 products or a subscription monthly payment service. - just make sure that they all add value)

With regards to affiliate links within your books - i would say a yes. -- make use of every single opportunity to earn from it - granted most people will just google sites from your book but why miss an opportunity for additional revenue
