E-mail Correspondence Tracker / Recorder?

Is there any tools out there we can plug into our e-mail servers to record our e-mail correspondence logs. I want to be able to go back through our logs and analyze our communications (to see where we need to improve at).

I currently use Outlook Express. However sometimes our replies get unorganized as we are responding multiples times at times. Or we are sending out 2-3 messages; therefore losing our e-mail correspondence log.
