Domains Transfer between hosts.

I need help with the transfer of domains between hosts.

How do people find someone to do this that you can trust?

Is there a way to check behind them to make sure they did not leave nasty presents behind? (I actually had this happen with a domain one time and I do not want it to happen again.)
