Does anyone know how temporary email sites work, for example temp-mail.org or similar?

Does anyone know how temp mail services work?

I don't know if this is how they are working but i have a feeling that the email servers are set on CATCH ALL.
So:
1)The website script generate a random email address for temporary use
2)The script is connected to the mail server, it gets all emails received on the server and sort them by the email headers to see on what address the mail was sent
3)The script is showing you the emails received for your temp address.
