It becomes very obvious when there was a change in topics that happens vry quickly such as SEO or software. Having an up to date is helpful, but really I takes the information much more seriously.
Does anyone actually read the "last updated" date on a post before trusting it?

The date catches my eye most when I am looking for some tym sensitive information. If the date was written as updated yesterday but the information is out of date then that date is meaningless to me.

It’s only relevant if it’s a very time specific topic, but generally people don’t check the dates on a regular basis.

I think it depends on the topic. If I'm reading about something that changes frequently, I definitely check the last updated date. But for evergreen topics, I rarely notice it. The date is more useful when the information itself can become outdated, not just as a generic trust signal.
Honesty speaking, the date is just an easy way of filtering things out not a stamp of credibility. If anything is marked as updated but the examples are definitely outdated that is it.
