When building out new large specific niches site that will have a lot of content ( 500+ Pieces) and you eventually plan to dominate/cover the whole niche.

Do you Target only the Low Hanging Fruit/Keywords at the start no one Has written anything about,
or go after every single keyword there is in the Niche disregarding the current competition (of course completely beating the competitor's articles in quality) ?

I know the common practice nowadays is to go after low-comp stuff which no1 has written about - It has worked fairly good for me as well and is a quick and easy way to get some traffic.

However...Can you really Gain The Topical Authority by skipping 90% of the stuff and only targeting the ultra-small stuff?
Obviously, I would want to rank one day for the high-comp stuff, however, I fully realize that there's no way to do that with a new site with 0 authority even if you have much better content.

So What do you do?
Only go after the Low hanging fruit, then after some years start covering the big stuff?
Or Cover everything from start + siloing everything properly. After all that is done you will have the largest topical authority on the subject out of everyone, and hope that with time the bigger stuff will also start to rank?

The obvious choice for long-term plan I guess is the 2nd one, however, is it really doable and is it possible to beat out the big guys solely by having the best content and the most Topical Authority?
With some random small website, I wouldn't bother as it would be impossible to rank for those terms ,you would only waste huge amounts of time and money, however what happens when we are talking about covering the whole niche?

Anyone have any Experience on this , in this kind of scale?

You have to create a mix of articles targetting primarily what your site is about. Don't get hooked on a per article basis for your keywords, at least not right away.
You should silo if you can, (fancy idea of organized linking) which is easy enough if you keep track of your structure.

Once you have some articles up that makes sense for the site, then you will see obvious areas where you can add more content, such as popular pages when you share on social media.

Going for low keywords can help get your pages to a good ranking, but you would need to have broader topics too, maybe even about the industry,
otherwise, you'll be treated like a niche site only, even if you have 500 posts!

I don't think its possible to cover a big niche completely if you are expecting that to be the size. There are so many low keywords, but that doesn't always translate to clickthrough earnings.
Brand your site as solid as you can first 10 big posts, then you can give google the best impression of what your site is about the first time it starts to crawl you.
I notice for one of my sites I have a keyword that ranks #1 for a low/medium hanging keyword and its shaped the ranking of the subsequent articles I posted on the same part of the niche,
even after posting them after different articles have been posted.

That really depends on your intention and budget,

if you do have the budget to target competitive keywords with the right content and necessary links then you can go for it,
that will bring some good traffic/ROI if you're picking the right keywords but things will take some time,

other than that, targeting the lower competitive ones do rank easier and help to grow steady, build authority & bring relevant traffic which makes it even easier to aim & rank for the higher competitive keywords later, but this will eventually take time but the results would be much faster

I concur with each and everything mentioned here. I have chosen a highly competitive niche with very popular keywords, however, I am beginning with those with relatively lower levels of competition to at least generate some good traffic
