Usually most of us will link within our sites...
for an example ... healthy food , high light it and link to your another article mention healthy foods.

I wonder do you link to other sites?
 
No harm in doing it. Just keep in mind that you're giving your visitors new sources of info and they could ditch your site in the future.
SEO wise it's no harm. It's not like you'll lose link juice.

There is no definitive ranking benefit from linking out, but you should include trusted websites on important pages to show that you have trustworthy content and sources.

You can bleed juice from your site if you link out too much, AKA sitewide footer links and what not. So there is a chance you can "lose" link juice, but linking to trusted sites is actually very important and highly encouraged by Google.
 
The thing which you are saying is called inner page links, if you cross the limits then it will be spam. It is always better to insert some authority links inside your article to be more informative and to know in depth and the link juice will pass to the site from your site and vice versa.
 
Yes, if this website has good DA, PA, TF, PR, and more factors on the good level. You can linking to Wikipedia for example. But don't try put on your website affiliate links as do follow.

hey, I have a question here, do the owner of websites being linked can figure out the traffic that they are getting through my website? or in other words, do they know how much of the traffic I am routing towards their websites?

Yes, with a good stats tracker they always see the referrer.
 
No harm doing it really. Esp when you take a splice of their content, it's always to give credits where it is due :)
 
If you don't want to send the juice to external link just make it nofollow or noindex.
