I've noticed there are differences in global monthly searches based on whether a keyword is plural or not. Is it better to just go for "word" or "words". Or does it even matter?

Yeah, but it isn't that accurate, in terms of link building it is good to mix it up, but if you rank highly for one you will rank quite high for the other as well.

It matters a lot in terms of search volume. If a plural word have some decent search volume just like the singular, then you can optimize your site to rank for both. I have seen many sites ranking well for both so it can be done.

Ya, I've noticed ranking for one automatically ranks you better for the other, I guess I'll try ranking for both, its nice way to rank for two keywords.

It depends on whether the plural is redirected to the singular or vice versa because of Google's stupid stemming / misspell system.

I was told by an "SEO Expert" that if you rank for the plural version of the keyword, then you should also rank for the singular. That doesn't seem to be the case from my experience, but whatever.

Well I just ran a little backlinking campaign on the plural version of a keyword which also ranked me pretty well for the non plural version, but not as well, so there definitely is some difference, at least for that particular keyword. I'm going to run a second campaign for the non plural version and see what happens.
