My site is an adult site with more than 10k pages, currently I only include 1000 latest links in the sitemap.
Should I include every links of my site, I don't want google to deindex my old links just because it is not in the sitemap.

Google will crawl from the pages listed in the sitemap, so its enough to include a few central urls unless you want to provide exact change dates of the urls to more timely updates, then you have to list all these.

Usually you can create the sitemap with a crawler you run locally, that should help in creating a larger list, but listing everything is not necessary.

Having a sitemap is helpful, but not required,
Google crawlers still can reach your other pages by internal linking,
The only problem here that it will probably take more time for indexing, but you shouldn't worry about anything else

Yes , you can Include all pages. The purpose of the XML sitemap is to tell the search engines about all of your content.

Sitemap is not mandatory it's just a bonus for google to discover your links faster, but sitemap or not, google will end up discovering your links thanks to internal linking.

Yoast SEO plugin will help you with that. If you use Yoast, it automatically creates and submits for your website and you don't need to do it manually.

I do reupload, I've reached 40k pages now contains ~100TB movies

You should list all your pages on the sitemap.
