I managed to get one proxy working no problem (hilink mode)
I am trying to do multiple dongles on a powered USB hub (1 rasperry pi) and I am having issues even with 2 dongles
I am trying docker containers at the minute and I am trying different solutions but I am struggling with multiple E3372 on raspberry pi 4

3proxy is very good, but it does not support UDP properly... (udp redirects for parent)
Using nearly for 4 years, works fine to this day

Awesome guide. Would real mobiles be better to use for authenticity than a dongle setup?
Yes, and if you will use 5g phones you will get more down/up speeds, At least I got up to 400 Mbps(it depends on your mobile carrier, distance from towers and load) using 5G phone but using 4g dongles average 30Mbps, highest 50Mbps
