If I am asked to verify my account, and use one phone number, and then I am asked again say a week later, and I use a different number, would that be dangerous for my account? Thanks.

Try not to get verifications at all. Several phone numbers is bad, but not that critical.

So if I do everything properly and safely, one proxy per account, low settings on followliker, etc, I shouldn't be getting any verifications?

You don't need proxies if you do everything right.

Curious about this.. Can you please explain? I'm currently spending two buttloads on monthly IG virgin proxies and then 10 hours /month updating all the proxy settings.

I got one account banned for using the same number twice. I used it several times already for other accounts too. I buy a new number for $1.99 off an iPhone sms app and only use it to verify 3 accounts max, then buy another number. But if you have to verify a lot, check your settings are not too aggressive, go easy a few weeks/months.
