How can I do detailed statistic of my FB friends - age and nationality ?

Facebook only offers you statistic data from fans of pages you administer, not from friends.

However, there are (non simple, but effective) ways of getting that sorted out, getting a segmented database. If you are interested in more details, PM.

If their birthday is visible on their profile, you can scrape their birthdays and do the math. Nationality might be a little harder as FB does not have an option for this.
