Ok. But how do you plan on converting them to fiat without KYC?
exchangers? or you connect your coinbase account to it but you need to verify your id then but yea
There are a lot of exchange sites/users who only take 1% fees.
 
Coinbase = Normal Coinbase KYC needed. Because you can sell and buy crypto.
Coinbase Commerce = Payment Processor no KYC needed.

Why not just a non-KYC like KuCoin or Bybit and just have their coins for payment there? Or just get a or or Cold wallet?
 
Paxful allows some limited transaction without KYC. It can be a good option for you.
 
Coinbase updated my app and forgot all about the deposit and transaction history quite conveniently. Amount was only $250 so I didn't bother contacting their support. But scammers in crypto are everywhere.

There is not such platform because it will increase the risks for them.
